It’s 5-O’Clock Somewhere: Summer Sendoff Margarita

Though the summer doesn’t officially end for another week or so, we’ve basically made peace with the end of saltwater, sun-kissed shoulders and white jeans until next year. Or at least we had, until we discovered this recipeone sip and we were back on the beach. A refreshing combination of citrus and tequila with the fruity effervescence of a Belgian saison, it’s the perfect drink for our current state of seasonal limbo. So what do you say? Let’s break out the white jeans for one last hurrah and raise our glasses to bid summer a fond farewell.



1 750 ml bottle of tequila
2‚ large navel oranges
2 limes
2 lemons
4 oz agave nectar
1 bottle saison beer


Juice the oranges, limes and lemons, then add the juice and the rinds to a large pitcher. Add the tequila and muddle the ingredients together until the smell of citrus is more aromatic than that of tequila. Let the citrus-tequila mixture steep for about an hour.

In a cocktail shaker, combine 6 oz of the infused tequila with ¾ oz agave nectar and ice. Shake well and strain into a small glass. In another shaker, add a small amount of beer and shake until foamy. Spoon the saison foam on top of the cocktail and serve immediately.

Yields 5 to 6 drinks.
