It’s Health O’Clock: Cashew Hot Chocolate

January 10, 2014

The easiest way to keep New Year’s resolutions? Incorporate chocolate into them. In the name of health and clean eating, we came up with this protein-packed, dairy-free spin on one of our favorite cold weather indulgences. Sweetened with agave nectar and perfectly creamy thanks to a generous helping of cashews, this is hot chocolate at its finest. Now move along, marshmallows don’t make this any harder than it has to be.

1 cup raw cashews (soaked for 4 to 8 hours)
1/3 cup cocoa powder
1 tsp. vanilla extract
1 tsp. cinnamon
2 tbs. agave nectar
½ tsp. sea salt
3 cups water

Drain the cashews and rinse with cold water. Combine cashews and remaining ingredients in a blender (we used a Vitamix, but any high-speed model should do the trick). Start at a low speed, then crank up to high. Let the mixture blend for about five minutes, or until it reaches the desired toasty temperature and creamy consistency. Serve immediately in a mug or tumbler.

Makes three servings.
