It’s 5-O’Clock Somewhere: Blackberry Thyme Champagne CocktailOctober 18, 2013
Coming off of last week’s‚ Spiced Pear‚ recipe, we thought we’d keep things a bit more rustic for the latest installment in our champagne cocktail seriesor at least as rustic as a cocktail involving champagne can be. This time we’re combining our favorite crisp bubbly with juicy-jammy blackberries and the distinct herby goodness of thyme. As if that weren’t incentive enough to mix up a batch, consider thyme’s medicinal properties and blackberries’ antioxidantsthis cocktail is‚ practically‚ a superfood.
WHAT YOU’LL NEED1 bottle chilled champagne
1 cup fresh blackberries
1 cup sugar
1 cup water
1 bunch fresh thyme (keep a few sprigs separate for garnish)
½ lemon, juiced
HOW TO MAKE IT
First, make thyme simple syrup by bringing the sugar, water and thyme to boil in a small saucepan. Remove the syrup from heat and let steep for 20 minutes, then remove the thyme and discard.‚ Stir in fresh lemon juice and let cool completely.
Divide the syrup between six‚ Mason Jar Sippers‚ with the blackberries and stir, breaking up the berries a bit and letting the juice mingle with the syrup. Add ice and top with champagne. Garnish with fresh thyme.
